What Is Oral Allergy Syndrome?

Oral Allergy Syndrome happens when your immune system mistakes proteins in raw fruits, vegetables, or nuts for similar proteins found in pollen. If you’re already allergic to pollen, your immune system has learned to react to those pollen proteins, and when it encounters a similar-looking protein in certain raw foods, it triggers the same response.

When these foods are eaten raw, this misidentification causes your allergy cells (mast cells) to release histamine and other immune mediators — leading to the itching or tingling in your mouth and throat.  

These symptoms usually appear within minutes of eating the raw food.

Why Cooked Fruit Often Doesn’t Trigger Reactions

The good news is that most people with OAS can eat cooked or baked versions of the same fruits and vegetables without any problems.

That’s because heat from cooking, changes the shape of the fruit proteins, destroying the resemblance to pollen. Once the shape is altered, your immune system no longer confuses the food with pollen — so the reaction disappears.
